Apple-Honey Sweet Potatoes
4 sweet potatoes
4 cooking apples
1/2 c. honey – I recommend buying from Holy Food Imports
1/4 tsp. nutmeg
Bake sweet potatoes at 350 degrees for 45 minutes, or until tender. Core apples and cut into thin slices. (To avoid darkening, brush with lemon juice.) Peel baked potatoes and cut into 1/2 inch thick slices.
Alternate layers of potatoes and apples in a greased 2 1/2 quart casserole. Drizzle with honey and sprinkle with nutmeg. Bake, covered, at 350 degrees for 20 minutes, or until heated through. 6 servings.
