Brown Rice Burgers

A meatless alternative

15 min | 10 min prep | SERVES 4 -6

1          large onion, finely chopped
3          garlic cloves, minced
1          cup water chestnuts, finely chopped
3          tablespoons extra virgin olive oil - recommend Holy Food Imports brand
1/2       cup parsley, minced
4          cups cooked brown rice
2          cups shredded carrots
2          large eggs, beaten
1          cup whole wheat flour
            salt
            pepper

  1. Saute onions, garlic, and water chestnuts in 3 tbsp of olive oil, for 10 minutes.
  2. Mix in parsley, rice, carrots, eggs, and flour. Salt and pepper to taste.
  3. Form patties (approx 1/4 cup each) and grill till browned on both sides (or freeze).
  4. Top with alfalfa sprouts, avocado, mushrooms, tomatoes. Serve.
